Thalippu Vadagam



Ingredients

  1. Shallots – 500gm
  2. urad dhal - 1 tbsp
  3. Garlic – 2 whole
  4. Mustard – 1 tbsp
  5. Fenugreek seeds – 1 tbsp
  6. Cumin seeds – 1 tbsp
  7. Anise - 1/2 tbsp
  8. Turmeric powder – 1/2 tbsp
  9. Curry leaves – few 
  10. Sesame oil – 20 ml

Pre- preparations

  • Peel onions 
  • Wash and soak dhal for 1 hr
  • Drain water from dhal
  • Peel garlic and keep ready

Method:

  • Mix all the ingredients without oil
  • Dry in direct sunlight for 3 days
  • After 3 days, add oil 
  • Mix and store
  • It makes only quarter quantity of what is dried on first day
Note:
This vadagam can be used for karakuzhambu, vegetables, chutneys. It adds extraordinary taste.
My mil prepares this every year and gives to me.

This vadagam lasts long for years if well prepared and stored. 
No worries if you do not have sunlight or time to do this, can buy readymade one from any supermarkets :)
