Vatha kuzhambu

Quick and tasty recipe which is widely prepared in marriages.
You can add ladies finger, drumstick, manathakali, sundakkai for this. I have added wonder berry/ manathakali.
It stays good for as long as a week refrigerated

Ingredients:

  1. Tamarind extracted -2 cup (2 gooseberry size)
  2. Sambar powder - 2 tsp
  3. Rasam powder - 1 tsp
  4. Gingely oil - 4 tsp
  5. Red chilly powder- 1/2 tsp
  6. Ghee- 2 tsp
  7. Manathakali / wonder berry- 3 tsp
  8. Mustard seeds - 1 tsp
  9. Curry leaves - few
  10. Turmeric- 1/2 tsp
  11. Salt- per taste

Recipe:

  • In a bowl, add sambar and rasam powder with little water and keep aside
  • In a pan, add gingely oil and splutter mustard seeds
  • Add curry leaves
  • Add tamarind extract
  • Allow it to boil
  • Add salt and turmeric
  • Add powder mix kept in bowl
  • Boil until it comes to half the quantity
  • Switch off
  • In a separate, add ghee and roast manathakali till it becomes crisp
  • Add the roasted manathakali to the switched off pan.


Mix and eat with rice along with veggies
