Fruits & Nuts Pulao - Quick Lunch box

Fruits & Nuts pulao

Ingredients:

  1. Basmati rice - 2.5 cups
  2. Water - 5 cups
  3. Salt - taste
  4. Apple- 1 cup
  5. Pineapple- 1 cup
  6. Raisins - 1/2 cup
  7. Cashews - 1/2 cup
  8. Badam/Walnuts - 1/2 cup
  9. Mint leaves- 1/2 cup
  10. Cloves- 4
  11. Cinnamon stick - small
  12. Bay leaf -1
  13. Ginger garlic paste - 1tsp
  14. Ghee - 1 cup
  15. Onion - 1
Wash and soak basmati rice for 15 mins ( you can do it while cutting fruits)
Deep fry cut onion

Method

  • In a pressure cooker, add rice and salt
  • Pressure cook for 2 whistles
  • In a pan, add ghee and add cloves, cinnamon, bay leaf
  • Add ginger garlic paste
  • Add little more ghee and add Nuts and raisins
  • Add fruits
  • Add mint leaves
  • Add cooked rice and mix well
  • Add fried onions
I have not added anything for spice, you could add 2 green chillies for a bit of spice in it :)
